Does it automatically publish the page?
Only after you approve the local preview. Buyable builds locally first, then can guide your agent through publishing the page and collecting signups.
What counts as a good signal?
Someone signs up, replies, asks when they can use it, or tries to buy it. Compliments and pageviews are nice, but they are not pull.
